Air Fryer Pork and Sauerkraut
Begin by allowing the pork to sit at room temperature for an hour and patting it dry.
Score (slice) the top fatty part of the pork with a knife 5 or 6 times.
Mix together the spice rub for the pork. I added salt, ground black pepper, smoked paprika, garlic powder, and olive oil.
Rub the spice and oil mixture all over the pork, making sure to get in between the slices on top.
Place the pork loin inside the preheated air fryer and cook it for around 40 minutes.
While the pork is cooking, mix together the sauerkraut side dish: sauerkraut, apple, red onion, caraway seeds, olive oil, and sugar (optional).
After the cooking time, check the internal temperature of the pork reaches 145°F.
When the pork has reached the right temperature, remove it from the air fryer and allow it to rest for 20 minutes.
While the pork rests, add the sauerkraut mixture to the air fryer.
Cook it for 15 minutes, stirring it every 5 minutes until it's heated through.
