Ingredients – Chicken thighs – Salt and black pepper – Garlic powder – Italian seasoning – Fresh mozzarella – Cherry tomatoes – Balsamic vinegar – Fresh basil leaves 4 servings 25 mins
Preheat oven to 425°F. Season chicken thighs with salt, black pepper, garlic powder, and Italian seasoning.
Arrange chicken thighs in a baking dish and bake for 20-25 minutes or until cooked through.
Remove the baking dish from the oven and top each chicken thigh with a slice of fresh mozzarella and a few cherry tomatoes.
Return the baking dish to the oven and bake for another 5-7 minutes or until the cheese has melted and the tomatoes have softened.
Drizzle balsamic vinegar over the chicken thighs and garnish with fresh basil leaves.
