Mashed Rutabaga

Begin by dicing the rutabaga and adding it to a pot of water with a rolling boil. Reduce the heat slightly so it doesn't overflow.

Boil until the rutabaga is fork-tender, just like you would with mashed potatoes. Strain the rutabaga and return it to the pot.

Next add ghee. If you'd prefer, you can add an alternative like coconut oil, olive oil, or avocado oil instead. 

Season the mashed rutabaga with salt and pepper. I like to keep it very simple. Sometimes the most simple things are the best!

Mashed Rutabaga is also known as "swede" or "neeps" in Scotland. This is part of the Burn's night "Haggis, Neeps and Tatties" trifecta enjoyed on burn's night which is on January 25th.
